Chocolate Cherry Cordial Cookies


At Arcadia Kitchen & Bath, we are always looking for ways to make your life easier and that is especially true around the holidays. Whether you are looking for an easy, delicious treat to make at home with your family, for your neighbors, or something to bring to a holiday party, this Chocolate Cherry Cordial Cookie recipe is the way to go.

For the Cookies:

½ cup butter, softened (make it vegan with vegan butter)

1 cup sugar

1 egg, room temperature

1 tsp rum extract (optional)

1 ½ cups flour 

⅓ cup cocoa powder

¼ tsp salt

¼ tsp baking soda 

¼ tsp baking powder 

Approx. 30 maraschino cherries, drained and patted dry with paper towels

2 tbsp white granulated sugar, for coating

For the Glaze: 

1 cup confectioners’ sugar

1 tsp rum extract

4 tsp maraschino cherry juice

Directions:

  1. Preheat oven to 350℉. Using either a large bowl with a hand mixer or a stand mixer, beat the softened butter, sugar, egg, and rum extract until it’s light yellow and fluffy. Slowly add in flour, cocoa powder, salt, baking soda, and baking powder so as not to make a mess. Beat well until thoroughly mixed. 

  2. Scoop out about 1 tbsp of dough. Using your hands, roll the tbsp of dough into a ball and then flatten. Place one of the cherries on top and mold the dough around it into a ball again. Roll the ball in sugar. Repeat with remaining dough and cherries.  

  3. Place cookies about 2 inches apart on an ungreased baking sheet. Bake for 8 minutes. Let cookies cool on a wire rack.

  4. For the glaze, whisk together all ingredients until smooth. Spoon glaze over cookies once cookies have cooled. 

  5. Enjoy!
