The Best Apple Recipes for Fall

The best part about a new kitchen is getting to use it. Apple picking season has arrived here in Maine, so it’s time to make our homes smell amazing with delicious baked apple treats. Below are three recipes that are absolutely worth trying this season! These are sure to make your home smell incredible and will get you into the fall spirit. Enjoy!

 
 
 

Apple Cinnamon Rolls

Ingredients:

For The Dough

  • 4 cups of all-purpose flour

  • 1/3 cup of granulated sugar

  • 1 packet or Rapid Rise Instant Yeast

  • 1 tsp salt

  • 1/1/2 cups of milk

  • 6 tbsp of butter

  • 1 egg, room temperature

For The Cinnamon Sugar Filling

  • 1/4 cup of butter, room temperature

  • 2/3 cup of light brown sugar

  • 1 tablespoon of ground cinnamon

  • 1/2 teaspoon of ground nutmeg

  • 1/2 teaspoon of ground ginger

  • 1/4 teaspoon of ground cloves

  • 3 apples, peeled and diced

  • pinch of salt

Instructions

  1. In a large bowl combine 2 cups of the flour, yeast, salt and sugar in a bowl. Mix to combine.

  2. In a microwave safe bowl, microwave the milk and butter for 30 seconds until warm and the butter is mostly melted. The mixture should be warm, but not hot. If it is too hot, make sure to let it cool before adding to the yeast to prevent killing the yeast. Add the warm milk and butter to the flour mixture.

  3. Add the egg. Beat on low speed, gradually increasing to high until completely combined, about 2 minutes.

  4. Scrape down the bowl and add 1 more cup of flour, beating until combined. Add the remaining cup of flour in a little at a time until the dough starts to pull away from the sides of the bowl and form a ball.

  5. Turn the dough out onto a well floured surface and knead for about 10 minutes until smooth and you can stretch a piece of dough out between your fingers without it breaking. This means the gluten has developed and your dough will be pillowy soft.

  6. Transfer the dough to an oiled bowl and cover. Let rise in a warm place for 1 hour or until the dough has doubled in size.

  7. While the dough rises, make the filling. Peel, core and dice your apples into small pieces. Combine the sugar, spices, and salt together in a small bowl and mix well. Set aside.

  8. Once the dough has risen, roll it out into a long rectangle about 18 x 12 inches on a well floured surface.

  9. Spread the butter for the filling all the way to the edge of the dough. Sprinkle the sugar mixture and the apple pieces over the butter, pressing it down to stick to the butter.

  10. From the long end, roll the dough away from you into a tight roll, sealing the bottom edge down by pinching the dough together.

  11. Use floss or a very sharp knife to cut the dough into 12 even rolls. Place the rolls in a 9 x 13 inch pan lined with parchment paper. Cover loosely with a dish cloth and allow to rise for another hour until doubled in size and puffed up.

  12. Bake the cinnamon rolls at 350°F for 30 minutes or until they are golden brown and no longer doughy. Transfer to a wire rack to cool.

  13. While the rolls cool, make the cream cheese frosting. In a stand mixer fit with the whisk attachment combine the cream cheese, butter, powdered sugar, milk, salt, and vanilla extract.Beat on low speed, gradually increasing to high until light and fluffy. Spread the icing evenly over the 12 rolls. Enjoy warm!

Apple Scones with Spiced Maple Butter

Ingredients:

  • 2 ¾ cup all-purpose flour

  • ½ cup granulated sugar

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 2 oz Mezcal or Tequila (1/4 cup)

  • ½ cup butter, chilled and cut into small pieces

  • 1 cup finely chopped tart apple, such as Braeburn, Jonagold, or Granny Smith

  • 2 eggs, lightly beaten

  • ¾ cup heavy cream

  • 1 egg yolk, lightly beaten

  • 1 tablespoon heavy cream

  • 1 small Braeburn, Jonagold, or Jonathan apple, cored and thinly sliced

  • Coarse sugar or granulated sugar

  • 1 recipe Spiced Maple Butter or honey

Spiced Maple Butter:

  • ½ cup butter, softened

  • 3 tablespoon pure maple syrup or 2 Tbsp. mild honey

  • ¼ teaspoon apple pie spice or ground cinnamon

    In a small bowl stir together the butter, maple syrup, and apple pie spice until smooth. Cover and chill for up to 1 week. Serve at room temperature. Makes 2/3 cup.

Directions:

  1. Preheat oven to 400°F. Line a very large baking sheet with parchment paper or foil. In a large bowl combine the first five ingredients (through salt). Using a pastry blender, cut in cold butter until mixture resembles coarse crumbs. Stir in the 1 cup finely chopped apple. Make a well in center of flour mixture.

  2. In a small bowl combine the 2 eggs and 3/4 cup heavy cream. Using a fork, stir egg mixture into flour mixture just until moistened. Turn dough out onto a floured surface. Knead dough by folding and gently pressing it for 10 to 12 strokes or until nearly smooth. Divide in half. Pat or lightly roll each half into a 6-inch circle. Cut each circle into 6 wedges. Place wedges on prepared baking sheet.

  3. In a small bowl combine the egg yolk and 1 Tbsp. heavy cream. Brush some of the yolk mixture over wedges. Arrange apple slices on top of wedges, pressing lightly to adhere. Brush with remaining yolk mixture; sprinkle with coarse sugar.

  4. Bake 15 to 18 minutes or until light brown. Cool on baking sheet 5 minutes. Remove and serve warm with Spiced Maple Butter.

Apple Crisp Recipe

Ingredients:

  • Salted butter for the baking dish

  • 8 medium Granny Smith apples, peeled, cored and sliced

  • 1 cup granulated sugar

  • 1 heaping tablespoon all-purpose flour

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon kosher salt

  • 1 cup of all-purpose flour

  • 1 cup of quick cooking oats

  • 1 cup of packed brown sugar

  • 1/4 teaspoon of baking powder

  • 1/4 teaspoon of baking soda

  • pinch of kosher salt

  • 1 stick of salted butter, melted

  • ice cream or frozen custard for serving

Directions:

  1. For the apples: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with butter.

  2. Arrange the apple slices in the prepared baking dish in an even layer. In a bowl, mix together the granulated sugar, flour, cinnamon and salt. Sprinkle the mixture over the apples, then pour 1/2 cup water over top.

  3. For the topping: In a separate bowl, mix the flour, oats, brown sugar, baking powder, baking soda and a pinch of salt. Stir while drizzling in the melted butter. Sprinkle the topping in an even layer over the apples.

  4. Bake until the topping is slightly crisp and golden brown, about 43 minutes. Serve warm or at room temperature on its own, with ice cream or with frozen custard.
