Pumpkin Bread Recipe

This pumpkin bread recipe is originally an old Maine bread recipe filled with spices and memories of autumn wrapped up in a delicious loaf. 


Ingredients:

  • 1 (15 ounce) can pumpkin puree

  • 4 eggs

  • 1 cup vegetable oil

  • ⅔ cup water

  • 3 cups white sugar

  • 3 ½ cups all-purpose flour (sifted)

  • 2 teaspoons baking soda

  • 1 ½ teaspoons salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • ½ teaspoon ground cloves

  • ¼ teaspoon ground ginger

Baker’s note: This recipe is naturally dairy-free. If you would like to opt for a slightly creamier consistency, you can substitute the 1 cup vegetable oil for ½ cup of butter and ½ cup oil. If you are wanting a slightly healthier version, substitute the 1 cup vegetable oil for ½ cup of applesauce and ½ cup of vegetable oil. 

Step 1
Preheat your oven to 350 degrees F. Use butter, or your favorite greasing ingredient, to grease, then flour, your three (3) 7×3 inch loaf pans.

Step 2
Choose your favorite large mixing bowl and mix pumpkin puree, eggs, oil, water and sugar. Reserve another bowl for dry ingredients, where you can whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Slowly stir the dry ingredients with the pumpkin mixture until everything is just blended. Be sure to not overwork the mixture! Once combined, pour the mixture evenly into the loaf pans. 

Step 3
Bake for roughly 50 minutes. Remember every oven bakes differently! Do the toothpick test to see if the loaves are done.
